蛋奶蛋糕的做法
- 先把蛋清,蛋黃分離,蛋清冰箱冷藏(現在天氣比較熱,冷藏后更容易打發)??鞠涮崆邦A熱,155度30分鐘
- 黃油小火煮沸后,立即關火
- 倒入提前過篩的低筋面粉中
- 攪勻,放一旁晾涼備用
- 晾涼后加牛奶,5個蛋黃,攪勻
- 蛋清中加檸檬汁,朗姆酒去蛋腥味
- 打蛋器中速打發,蛋清打到大泡泡時,第一次加糖(45克糖分三次加入)
- 打到小泡泡時第二次加糖
- 打到細膩有紋路時第三次加糖
- 提起打蛋器,蛋清呈小彎鉤狀就可以
- 取三分之一蛋清放入蛋黃糊中拌勻
- 拌勻后倒入剩下的蛋清中,拌勻

- 倒入模具中,模具是10×10×10厘米,模具里面墊油紙,外面包錫紙,兩個模具再放入一個深一點的烤盤里,里面放2厘米左右的涼水,水浴法烘烤
- 烤箱155度60分鐘左右,每個烤箱溫度不一樣,根據自己烤箱溫度而定。
- 烘烤完立即拿出,撕掉油紙晾涼
- 冰箱冷藏一夜,第二天味道更佳哦
