奧爾良雞肉芝士包的做法
- 制作餡料:奧爾良雞肉撕成小條,加入馬蘇里拉奶酪碎、沙拉醬和少許黑胡椒粉混合均勻。
- 面團材料后油法揉至出膜,此款餐包揉至擴展即可。
- 直接分割成5份,約94克/個,滾圓松弛10分鐘。
- 面團搟開成直徑約15cm的圓形面片。
- 翻面后放入50克餡料。
- 像包包子一樣包起來。
- 收口處捏緊。
- 翻面整理一下形狀,完成一個面包坯的整形。依次做好5份。

- 面團表面噴水,沾滿芝士粉。

- 溫暖濕潤處(溫度36度,濕度75%)發酵至1.5倍大,用剪刀在頂部剪開一個十字口。
- 放入預熱好的烤箱中層,上下火180度20分鐘。表面上色滿意后加蓋錫紙。
小貼士
1、奧爾良雞肉可以買現成的,也可以自己用雞胸肉或雞腿肉加奧爾良調料制作。如果是用自己制作的奧爾良雞肉,務必記得徹底放涼后再加入奶酪碎和沙拉醬。
2、表面裝飾用的是帕瑪森干酪粉,味道比較濃郁。如果不喜歡太厚重的奶酪味,可以不用干酪粉或者改用白芝麻裝飾。
