貝貝南瓜奶酪歐包|健康低脂飽腹的面包的做法
- 高筋面粉+糖+鹽,全部拌均勻,加入大約95度的開水,再攪拌均勻,只需要拌到無干粉就可以了,放涼后使用,可放入冰箱冷藏兩個(gè)小時(shí)再使用。
- 面團(tuán)材料放進(jìn)廚師機(jī)桶,做好的燙種也一并放進(jìn)去。開啟廚師機(jī)揉面,可預(yù)留一點(diǎn)牛奶慢慢地加進(jìn)去。這款面包的面團(tuán)只需要揉到八九成筋就行,不需要揉到很薄的手套膜狀態(tài),可以預(yù)留一點(diǎn),千萬不要揉過頭。
- 揉好的面團(tuán)收圓放發(fā)酵盒中,蓋上放進(jìn)冷藏發(fā)酵箱或者放進(jìn)冰箱隔夜冷藏發(fā)酵。
- 洗凈后的貝貝南瓜切小塊,加入黑胡椒碎和海鹽,全部拌均勻,喜歡蒜泥的可加10克蒜泥,全部拌勻之后再噴一點(diǎn)點(diǎn)橄欖油,全部拌勻后放在烤盤上,放進(jìn)烤箱200度烤熟,時(shí)間大概15~20分鐘左右。
- 烤好的貝貝南瓜,這樣子空口吃都特別好吃。
- 隔夜發(fā)好的面團(tuán)倒出來輕拍按壓排氣,排出大氣泡。
- 排好氣的面團(tuán)分成6份,滾圓蓋上松弛20分鐘。
- 提前軟化好的奶油奶酪,加入細(xì)砂糖拌均勻,裝入裱花袋備用。
- 取一個(gè)松弛好的面團(tuán),用手掌大概按平。用搟面杖搟成片狀。再輕輕翻個(gè)面,讓光滑面朝下。
- 放上貝貝南瓜和奶酪餡。
- 從上到下卷起來,卷的時(shí)候動(dòng)作輕柔一些。
- 收口捏緊,兩端用手輕輕收成橄欖型。
- 開始最后發(fā)酵,溫度30-32度,濕度80%,可以放進(jìn)發(fā)酵箱或者烤箱發(fā)酵,烤箱沒有濕度調(diào)節(jié),可以放一碗溫?zé)崴3譂穸取?/li>

發(fā)酵至大概1.5倍大,面團(tuán)光滑有彈性,手指按壓面團(tuán)會(huì)緩慢回彈。
- 發(fā)酵好的面團(tuán)表面撒薄薄的一層高筋面粉,把面團(tuán)中間割一道口,擠入室溫軟化好的黃油,再放點(diǎn)馬蘇里拉芝士碎。
- 放入充分預(yù)熱好的風(fēng)爐烤箱,風(fēng)爐模式同時(shí)烤兩層。總的時(shí)間定20分鐘,溫度先調(diào)200度,烤了8分鐘之后剩余的12分鐘把溫度調(diào)到170度。
時(shí)間溫度僅供參考,根據(jù)各家烤箱實(shí)際的調(diào)節(jié)。
- 烘烤中的面包,已經(jīng)能聞到香味了。
- 烘烤完成啦,兩層上色都很均勻。
- 烘烤完成出爐后輕震模具,脫模至冷卻架冷卻,冷卻到有點(diǎn)點(diǎn)余溫的時(shí)候裝帶密封保存。
