- 剪指甲
- 剁成兩段

- 涼水下鍋焯水
- 放姜片、料酒
- 焯5分鐘后撈出瀝干水分
- 放油炒糖色
- 變成褐色

- 放入雞爪和所有調料炒香
- 放入沒過雞爪的開水,加鹽,味精,生抽、老抽、蠔油
- 煮開后,轉小火先煮25分鐘。
- 切一個土豆。
- 25分鐘以后放入土豆再燉15分鐘。
- 15分鐘以后,大火收汁3至5分鐘。
- 出鍋前放蔥末,蒜末,香菜末。
- 軟爛入味的雞爪,就可以出鍋了,超級美味又下飯。
