年菜之咸八寶飯的做法
- 排骨斬段,香菇切厚片。
- 我還留了幾朵完整的,準備最后擺花樣兒
- 腌排骨的所有原料混合在一起,抓拌均勻,腌制最少三個小時,隔夜更入味。
- 糥米加水泡一個半小時左右。水要多一些。(這次忘了拍泡米了,這是上一次做的,用了250克小米和50克黎麥)注意??泡好后要盡量控干水。
- 趁著糥米控水的時間,把蒜切末,并把除去食用油、清水和蒜的所有調料混合在一起
- 臘腸切斜片,雞蛋一剖四,板栗去皮。
- 鍋中食用油,小火燒熱,加入蒜末炒出香味。
- 倒入控好水的糯米,小火翻炒。
- 米炒至稍有粘性,并有結塊狀時加入清水和剛才混合在一起的調料。
- 繼續小火翻炒,要一直不停攪拌翻動,以免粘鍋。
- 炒至鍋中不見水份即可。也不能太干,如視頻狀態就行。
- 把配料擺在碗底
- 填上半碗炒好的糥米(這是加了小米和黎麥的)
- 周圍用臘腸圍邊,中間鋪一層碎板栗仁。
- 上面再鋪滿糥米,半用手輕輕按平。一碗咸八寶飯就裝好了。
- 你可以按你喜歡的樣子去鋪底。
- 如果送人的話,可以用錫紙盒來盛。
- 全部裝好啦,剩余的配料不能浪費了,全部擺在上面
- 放入蒸鍋中,水開后計時蒸一個小時。
- 蒸好取出倒扣盤中。吃吧!

1,這個份量我做了三大碗,特別大的碗!
2,如果想用小米、紫米或其他雜糧替換一部分糯米,請不要超過總量的三分之一。不然粘性不夠。
3,如果想讓米的顏色更深或者更淺,請調整老抽的量。
4,我蒸的超大碗,用了一個小時,如果容器比較小,可以減少蒸的時間。
5,蒸好后冷藏可以保存三天,冷凍兩個月都沒問題。吃之前解凍熱透即可。(冷藏或冷凍都要用保鮮膜包起來,以免水份流失
