首先準備食材:豬腳 3 只,鹵蛋 20 個,腸子 500 克,鴨血 500 克,肥腸 500 克,牛筋 500 克,雞胗 500 克,蔥姜蒜、八角、香葉、干辣椒、花椒、小茴香等調料適量。
然后開始制作。把豬腳焯水去腥后,放入高壓鍋中,加入清水、料酒和各種調料,大火燒開,轉小火慢燉一個小時。燉好的豬腳撈出放涼備用。
接下來準備一個大盆,在里面倒入料汁。料汁的比例為:生抽 3 湯勺、老抽半湯勺、蠔油半湯勺、白糖兩茶勺、醋兩湯勺、紅油辣椒一湯勺、熟白芝麻一小撮、辣椒粉兩大湯勺,攪拌均勻備用。
將鹵蛋煮熟剝殼,腸子切片,鴨血切塊,肥腸切段,牛筋切條,雞胗切片備用。
炒鍋中加入食用油,先下入花椒和干辣椒爆香,再下入蔥姜蒜炒出香味,接著依次加入所有配菜翻炒均勻,最后淋上調好的料汁,再次翻炒均勻即可出鍋裝盤。
這個時候就可以起鍋燒水煮粉絲了,水開下入粉絲,煮至斷生撈出瀝干水分。
