帶皮五花肉500g;黃心土豆2個;冰糖15粒;生姜5片;八角2顆;香葉2片;干辣椒3個。
制作步驟:
1.五花肉切塊,浸泡2小時,換水3次,清洗干凈。肉塊冷水下鍋,加2勺料酒、3片姜,水沸后撇去浮沫,撈出用溫水沖洗。土豆切塊后,泡清水10分鐘。
2.熱鍋冷油,放入冰糖,小火翻炒,全程用鍋鏟背面畫圈攪動。當冰糖融化成琥珀色,并冒出細密小泡時,快速倒入焯好的五花肉,翻炒上色。
3.肉塊均勻裹上糖色后,加入3勺生抽、1勺老抽、1勺蠔油,放入姜片、八角、香葉、干辣椒,倒入開水,沒過肉塊。
4.大火燒開后,轉最小火,加蓋燉40分鐘。用筷子戳肉皮能輕松穿透時,湯汁已收至一半,這時肉塊達到了“顫巍巍”的軟糯狀態。
5.我們將土豆塊平鋪在肉塊上,不要翻動,加蓋繼續燉15分鐘。開蓋后,用勺子輕推,讓食材混合,嘗一下咸淡,酌情補少許鹽。
6.轉中火收汁,撒上一把蔥花,淋半勺香醋。待湯汁變得油亮濃稠,均勻掛在肉塊上,即可關火。
