食材準備: 老豆腐、香蔥、白芝麻、大蒜、家常調味料;
處理工作大蒜剝皮切成蒜末、香蔥切成蔥花;
調個醬汁1勺辣椒粉+1勺蒜末+1勺芝麻+1勺孜然粒+1勺孜然粉+2勺剛剛燒好的熱油淋上去激發香味,接著繼續加入2勺生抽+1勺陳醋/香醋+1勺蠔油+半勺白砂糖+1點點鹽,混合攪拌均勻;
制作步驟:
① 老豆腐切成小塊狀,然后起鍋多倒一些油,油熱五六成后下豆腐塊,中小火炸到豆腐表面都呈現酥脆的金黃色后,就可以撈出來控干油分;
② 煎好的豆腐裝盤或者裝碗,倒入剛剛準備好的調料汁,撒上蔥花,翻拌均勻,就可以開吃啦~
① 豆腐不要切太厚,否則炸的油就要更多,油的溫度是否合適,可以用筷子插入油中測試,如果插入后筷子周邊快速冒出小泡泡,這個時候就可以下豆腐區炸了
② 豆腐表面記得擦干水分,這樣可以避免下油鍋后濺出油花傷到自己~
