食材準備:
主角擔當:雞翅中8個、玉米2個。
輔助食材:雞蛋1個,淀粉50克,大蒜3瓣、生姜1小塊、小蔥1根;1勺料酒、1勺生抽、適量鹽、白胡椒粉、椒鹽粉。
制作步驟:
1.雞翅對半切開,洗凈,用廚房紙擦干水分,在雞翅兩面劃上兩刀,方便入味。把雞翅放入碗中,加入 1 勺料酒、1 勺生抽、少許鹽和白胡椒粉,抓勻腌制20分鐘。
2.玉米洗干凈,燒一鍋水,水開后放入玉米。煮熟以后,撈出瀝干水分,剁成小塊。
3.腌制好的雞翅均勻裹上一層淀粉,抖掉多余的粉;再放入打散的雞蛋液中滾一圈;最后再次裹上淀粉,放在盤子里備用。
4.在鍋中倒入足量食用油,開中火加熱,油微微冒煙,倒入雞翅,轉小火慢炸。炸至雞翅表面金黃、熟透后撈出。等油溫升高到七八成熱,再把雞翅放入復炸15秒,控油裝盤。玉米也炸20秒,撈出。
5.鍋中留少許底油,放入蒜末、姜末,炒出香味,加入玉米,翻炒均勻。再放入炸好的雞翅,撒上多多的椒鹽粉,快速翻炒,讓雞翅和玉米都均勻裹上椒鹽。最后撒上蔥花點綴,一盤色香味俱全的椒鹽玉米雞翅就大功告成啦!
