茶葉蛋,聽(tīng)起來(lái)簡(jiǎn)單,但要做得好吃,那可真有點(diǎn)講究。它不像普通水煮蛋那樣寡淡,也不像鹵蛋那樣只有單一的咸鮮。好的茶葉蛋,蛋清Q彈入味,蛋黃綿沙咸香,每一口都帶著淡淡的茶香和豐富的鹵料層次感。而且,它不僅是早餐的好搭檔,還是旅途中的能量補(bǔ)給,更是追劇時(shí)的小零食。自己在家做,用料放心,口味也能根據(jù)自己的喜好調(diào)整,簡(jiǎn)直完美!

雞蛋: 10-12個(gè)
茶葉: 紅茶10-15克
香料:
八角:2-3顆
桂皮:1小段
香葉:3-4片
花椒:1小撮
小茴香:1小撮
調(diào)味料:
生抽:3-4湯匙
老抽:1湯匙
冰糖:20-30克
鹽:5-10克
制作步驟:
第一步:雞蛋外殼用清水輕輕刷洗干凈。然后冷水下鍋,水量要完全沒(méi)過(guò)雞蛋。小技巧來(lái)啦:水里可以少放一點(diǎn)點(diǎn)鹽或者幾滴白醋。開(kāi)中火煮,水開(kāi)后轉(zhuǎn)中小火,煮8-10分鐘,確保雞蛋完全煮熟。撈出后,立刻放入涼水中浸泡一會(huì)兒。
第二步:等雞蛋不燙手了,敲蛋殼啦!用勺子背輕輕敲打雞蛋,讓蛋殼均勻地產(chǎn)生裂紋。敲黑板:裂紋要均勻細(xì)密,但不要把殼敲掉了。
第三步:準(zhǔn)備一個(gè)砂鍋,加入能沒(méi)過(guò)所有雞蛋的清水。放入紅茶、八角、桂皮、香葉、花椒、小茴香1小撮。接著加入調(diào)味料:生抽,老抽,冰糖,還有鹽。大火將鹵汁燒開(kāi),然后轉(zhuǎn)小火煮10-15分鐘,讓香料和茶葉的味道充分釋放到湯汁里。
第四步:敲好殼的雞蛋小心地放入熬好的鹵汁中,確保鹵汁能沒(méi)過(guò)所有雞蛋。用大火再次燒開(kāi)后,轉(zhuǎn)成最小的火,保持微微沸騰即可。蓋上鍋蓋,慢慢鹵煮至少1小時(shí)。如果有時(shí)間,鹵煮1.5-2小時(shí),味道會(huì)更濃郁。
第五步:鹵煮時(shí)間到了之后,別急著撈出來(lái)吃!關(guān)火,讓雞蛋繼續(xù)在鹵汁里浸泡。最好浸泡過(guò)夜,經(jīng)過(guò)充分浸泡的茶葉蛋,不僅顏色更漂亮,味道也滲透到了蛋黃里,那叫一個(gè)香!
