制作步驟:
1.茄子洗凈,去蒂,切成小丁。茄丁放入大碗中,撒上1小勺鹽,用手抓勻,腌制15分鐘。腌好后,用手將茄丁中的水分盡量擠干
2.豬肉末加少許料酒、生抽、一點點淀粉,抓勻腌制片刻。青椒切丁,蔥姜蒜切末。
3.鍋中放少許油,燒熱后,下入腌好的肉末,快速滑炒至變色,盛出。鍋內留底油,放入蔥末、姜末、一半的蒜末,爆香。
4.加入黃豆醬,轉小火慢慢煸炒,炒出醬香味。倒入處理好的茄丁,轉中大火,快速翻炒均勻,讓每塊茄丁都裹上醬料。
5.加入生抽、老抽、白糖,翻炒均勻。烹入少許料酒,增加風味。加入適量清水,水量差不多沒過茄丁。
6.加入肉末和青椒丁,大火燒開后,轉中小火,蓋上鍋蓋燉煮8分鐘,直到茄丁軟爛入味。
7.嘗一下咸淡,根據需要,用鹽調味。然后淋入水淀粉勾芡,邊淋邊用鏟子快速推動,直到鹵汁變得濃稠。
8.關火,撒上剩下的一半蒜末,淋幾滴香油,翻拌均勻,香噴噴的茄丁鹵就做好啦!
9.起鍋,加入足量水燒開。水開后,下入面條,用筷子攪散。煮好的面條撈出,迅速過一下涼開水,瀝干水分。
10.面條撈入碗中,舀上幾大勺熱氣騰騰、香氣撲鼻的茄丁鹵。如果喜歡,可以配上點黃瓜絲、胡蘿卜絲、焯水的豆芽等菜碼,營養更豐富,口感也更清爽!
