竹筍挑不對，做菜兩行淚！

不過話說回來，竹筍要是不會挑，做出來的菜分分鐘讓你懷疑人生。上周我去菜市場，看到一堆大爺大媽圍在筍攤前挑挑揀揀，趕緊湊過去偷師學藝。老板教了我幾招：

1. 看根部：根部發白帶點濕氣的才新鮮，要是干巴巴發黃，八成是老筍，嚼起來像木頭渣。
2. 掐指甲：用指甲在筍尖輕輕一掐，立馬冒水珠的是嫩筍，掐不動的那是“老頑固”。
3. 聞味道：帶泥土清香的準沒錯，要是有酸味或藥水味，趕緊跑！

蝦仁炒竹筍！鮮掉眉毛的懶人做法

竹筍的吃法可多了，涼拌、燉湯、清炒樣樣行。不過我最愛的是和蝦仁一起炒，鮮上加鮮，5分鐘搞定！今天就把我的私房菜譜掏心窩子分享給你們——

【食材準備】

• 嫩竹筍1根（剝完大概200g）
• 活蝦10只（冷凍蝦仁也行，但鮮味差一丟丟）
• 蒜3瓣、小蔥2根
• 蠔油1勺、白糖半勺、鹽少許
• 油不用多，1湯匙就夠

劃重點：竹筍千萬別焯水！老一輩總說竹筍有草酸要焯水，但我試過用鹽水泡20分鐘，草酸去得干凈，脆嫩感還保留得足足的！

2、【詳細步驟】

1. 處理竹筍——懶人必學！

剝筍殼這事兒看起來麻煩，其實有訣竅：把竹筍放案板上，用刀從根部往上劃一刀，然后像剝香蕉皮一樣把外層老皮撕掉，最后切掉底部發硬的部分。剩下的嫩筍切成滾刀塊，泡在鹽水里備用。

2. 蝦仁去腥小妙招

活蝦去殼去蝦線后，千萬別用料酒腌！我試過用清水沖兩遍，再用廚房紙吸干水分，這樣炒出來的蝦仁自帶清甜。偷偷告訴你們，把蝦仁從中間片開成兩半，不僅熟得快，還能裹滿醬汁！

3. 爆炒秘訣——鍋氣十足！

熱鍋涼油下蒜片和蔥白，“滋啦”一聲爆出香味后，立刻倒入竹筍猛火快炒！這時候一定要舍得顛鍋，讓每塊筍都裹上油光。接著加1勺蠔油、半勺白糖、一丟丟鹽，翻炒到醬汁發亮。

4. 蝦仁登場——鮮味暴擊！

把蝦仁倒進鍋里的瞬間，我都能聽到“啪啪”的收縮聲！繼續保持大火翻炒1分鐘，看到蝦仁蜷曲變紅就趕緊關火。最后撒一把蔥花，嚯！那個香味順著窗戶飄出去，隔壁小孩都來敲門了！
