- 我用的是6寸戚風(fēng)磨具。
奧利奧碎和融化黃油混合均勻鋪滿模具底壓平壓實(用勺子壓也可以),放冰箱冷藏備用。
- 吉利丁片提前用冷水泡軟泡發(fā),牛奶和20g糖隔水加熱篩入可可粉攪拌均勻。再加入泡好的吉利丁片攪拌至吉利丁片融化。放涼備用。
- 淡奶油加入30g糖打發(fā),有輕微紋路可以流動狀態(tài)就可以。
- 淡奶油和可可糊混合均勻,分三次加入。可可糊一定要放涼再與淡奶油混均,不然燙傷奶油。
- 倒入模具冷藏至完全凝固。放入冷藏之前震動出空氣。冷藏四小時以上或者隔夜。
- 脫模時模具底座墊一個比模具小的杯子,用吹風(fēng)機(jī)沿著模具外圍吹一圈,每吹幾秒就要試試把模具往下滑,看看是否能脫,如果不能再吹幾秒,以防過度導(dǎo)致慕斯邊融化影響外觀。也可用熱毛巾捂熱脫模。
- 最后根據(jù)自己喜好裝飾蛋糕~
- 就可以拍照開吃了。
