每天變著花樣做菜，硬生生把我從外賣的深淵里拽了回來。沒想到，這一吃竟讓我發(fā)現(xiàn)——原來我媽才是真正的“米飯殺手”！六道家常菜輪番上陣，電飯鍋見了都瑟瑟發(fā)抖。

一、紅燒雞腿

做法

1、雞腿劃兩刀，冷水下鍋加姜片、料酒，煮出血沫后撈起沖涼（肉更緊實）。

2、鍋里放冰糖小火炒出焦糖色，雞腿丟進去滾一圈“穿糖衣”，加2勺生抽、1勺老抽、1勺蠔油翻炒上色。

3、扔幾顆八角、香葉，倒開水沒過雞腿，大火煮開轉(zhuǎn)小火燜30分鐘，最后大火收汁到濃稠掛勺。

醬汁黑亮亮、黏糊糊，雞腿一戳就脫骨。挖一勺湯汁拌米飯，甜咸交織的油香裹著米粒，飯勺根本停不下來！

二、清蒸鯧魚

做法

1、鯧魚洗凈兩面劃刀，抹點鹽腌10分鐘，盤底墊蔥段、姜片。

2、水燒到冒大煙，魚上鍋大火蒸8分鐘（時間久了肉就老了）。

3、蒸魚豉油配方：2勺生抽+1勺水+半勺糖煮開，淋在魚身上，撒蔥花、紅椒絲，潑一勺滾油“滋啦”激香。

魚肉嫩得像豆腐，蘸著盤底混了蔥油香的醬汁，扒一口熱米飯，鮮味直沖天靈蓋！

三、洋蔥炒雞蛋

做法

1、紫皮洋蔥切細絲（甜味足），雞蛋加鹽打散。

2、熱油下雞蛋炒成大塊盛出，再爆香洋蔥絲，撒半勺糖炒到透明。

3、雞蛋回鍋和洋蔥猛火翻炒，淋幾滴香油出鍋。

焦香的雞蛋混著甜絲絲的洋蔥，挖一勺蓋在飯上，金燦燦油潤潤，分分鐘光盤！

四、西紅柿炒雞蛋

做法

1、西紅柿劃十字燙開水去皮，切塊備用。

2、雞蛋加鹽打散，熱油滑炒成嫩蛋盛出。

3、蒜末爆香，下西紅柿中火炒出沙，加1勺番茄醬增色，倒雞蛋翻炒，撒糖提鮮，留點湯汁最完美。

紅艷艷的茄汁浸透米飯，每一粒米都裹著酸甜味，專治沒胃口！

五、五花肉炒西葫蘆

做法

1、五花肉切薄片，西葫蘆去瓤切片（不然炒完水唧唧）。

2、熱鍋不放油，直接煸五花肉到焦黃出油，下蒜片爆香。

3、倒西葫蘆大火快炒，加1勺生抽、半勺蠔油，鍋邊淋醋激香。

五花肉的焦香混著西葫蘆的清爽，油潤潤的菜湯往飯上一澆，三碗起步！

六、紅燒鱸魚

做法

1、鱸魚兩面煎金黃（鍋底撒鹽防粘），盛出備用。

2、炒糖色，加蔥姜蒜、干辣椒爆香，魚回鍋淋料酒，加2勺生抽、1勺老抽。

3、倒熱水沒過魚身，扔幾片五花肉增香，小火燉15分鐘，收汁撒青紅椒。
