摩卡榛果軟歐的做法
- 備好巧克力豆,榛子仁切成黃豆大小的碎粒。
- 面團材料揉至出膜,擴展或完全階段皆可。
- 揉入榛子仁和巧克力豆。
- 直到均勻分布在面團中。揉好基礎發酵至2-2.5倍大。(溫度28-30度)
- 發酵好排氣分割成2份,滾圓松弛15分鐘。
- 搟開成圓形。
- 用手指在圓心部位戳一個洞。
- 慢慢抻開。
- 翻面,將內外環捏合在一起。
- 捏好后再次翻面,使捏合面朝下擺放。
- 依次做好兩個,溫暖濕潤處最后發酵至1.5-2倍大。(溫度35-38度)
