豆腐的營養重點在于它有好多優質蛋白。雖說豆腐是素食,可它蛋白質的氨基酸構成跟肉類的動物蛋白挺像的,關鍵是人體特別容易吸收。另外呀,豆腐還富含維生素、礦物質、不飽和脂肪酸還有大豆異黃酮,適當吃點對人身體有好處。豆腐高蛋白、低脂肪,也能起到肉的作用。
準備一塊鹵水豆腐,將它一切兩半,再改刀切成手指粗細的條狀,之后放入涼水鍋中,加入一點食用鹽,增加底味,給它煮開焯一下水,利用這期間準備一小塊豬肉,二分肥,八分瘦的,給它剁成肉末,放入盆中備用。
兩分鐘后,將焯過水的豆腐給它撈出,放入涼水中過一下涼,然后再切一點姜末,蒜末和小米辣丁,還有蔥花備用。
全部切好以后,將切好的肉末放入油鍋中,大火煸炒至變色,炒出油脂之后加入少許的料酒,蒜末,小米辣,再次翻炒均勻,炒出肉香味以后加入蠔油,生抽少許的老抽上色,之后加上花椒粉,再次給它翻炒均勻,炒至上色以后,在里面加入少許開水,食用鹽和雞精調味,再將焯過水的豆腐下入鍋中,輕輕搖晃一下,蓋上蓋子咕嘟兩分鐘。
