In the bustling streets of Mexico City's Polanco district, Espacio 18 Arquitectura has built a temple named "Xilote" to pay tribute to Oaxacan cuisine. The design of this restaurant is inspired by the iconic "Smoky Corridor" market in the area. With the rough texture of volcanic stone as the skeleton and the modern tension of steel structure as the soul, it weaves an immersive narrative about taste, vision and cultural memory in the urban pulse of Monterrey.
在墨西哥城波朗科區的繁華街巷,Espacio 18 Arquitectura 以 “玉米須”(Xilote)為名,打造了一座致敬瓦哈卡美食的殿堂。這座餐廳的設計靈感源自當地標志性的 “煙霧走廊” 市場,以火山石的粗糲質感為骨,以鋼鐵結構的現代張力為魂,在蒙特雷的都市脈搏中,編織出一場關于味覺、視覺與文化記憶的沉浸式敘事。
The restaurant entrance uses a "volcanic stone arch" to create a visual sense of ritual: the rough volcanic stone has not been finely cut, retaining the natural texture when it was mined. A metal grid is embedded above the arch. At night, the light shines through the grid and projects a light and shadow pattern similar to the iron frame of the market on the ground. The glass door is coated with a smoky color, which blurs the boundary between indoor and outdoor, and vaguely reveals the hot steam from the charcoal cooking in the kitchen, just like a modern metaphor of the "smoky corridor" in the traditional market.
餐廳入口以 “火山石拱門” 構建視覺儀式感:粗獷的火山石未經精細切割,保留著開采時的天然紋理,拱券上方嵌入金屬網格,夜晚燈光透過網格在地面投射出類似市場鐵架的光影圖案。玻璃門采用煙熏色鍍膜,既模糊室內外邊界,又隱約透出廚房內炭火烹飪的氤氳熱氣,宛如傳統市場中 “煙霧走廊” 的現代隱喻。
The ceiling design is an abstract tribute to the market's exhaust system: the wavy metal plates simulate the ups and downs of the flue, and the exposed concrete beams and warm yellow spotlights create an atmosphere of "food altar under the industrial dome". The walls are all made of khaki rammed earth plaster, and its granular texture echoes the traditional houses in the Oaxaca region, while the oblique volcanic stone walls are like the ruins of prehistoric civilization, forming a time-space dialogue between "pre-Hispanic times" and "contemporary industry" with the metal structure on the top.
天花板設計是對市場排氣系統的抽象致敬:波浪形金屬板模擬煙道的起伏韻律,搭配裸露的混凝土梁與暖黃色射燈,營造出 “工業穹頂下的美食祭壇” 氛圍。墻面采用清一色的土黃色夯土抹灰,其顆粒感呼應瓦哈卡地區的傳統民居,而斜向砌筑的火山石墻體則如史前文明的斷壁殘垣,與頂部的金屬結構形成 “前西班牙時代” 與 “當代工業” 的時空對話。
Volcanic stone is the core material language of the space: the kitchen worktop is carved from a whole piece of volcanic stone, and its porous structure naturally absorbs cooking oil, becoming a "taste yearbook" of time; the low walls and columns of the dining area are cut into thin slices of volcanic stone, with a close-seam splicing process to present a modern texture. The surface is matte-treated and feels as rough as sandpaper, which alludes to the rich taste of "mole sauce" in Oaxacan cuisine.
火山石是空間的核心材質語言:廚房操作臺以整塊火山石鑿刻而成,其多孔結構天然吸附烹飪油脂,成為時間的 “味覺年鑒”;用餐區的矮墻與立柱則將火山石切割為薄片,以密縫拼接工藝呈現現代質感,表面經亞光處理,觸感如砂紙般粗糲,暗合瓦哈卡菜肴中 “ mole 醬” 的厚重口感。
The custom dining table uses a combination of "steel frame + solid wood tabletop": the table legs are welded with rusted steel plates into an abstract shape of a market cart, the tabletop is made of Mexican walnut, retaining the tree knots and annual rings, and the edges are hand-polished to create a rounded arc. The backrest curve of the dining chair is derived from the traditional wooden stool, but it is stamped with cold-rolled steel plates and sprayed with matte black paint. The cool touch when sitting down forms a sensory contrast of "hot and cold" with the wooden tabletop, just like the taste collision of chili and lime in Mexican cuisine.

The restaurant is centered around an open kitchen, with a U-shaped central bar surrounding a charcoal grill. Diners can watch the chefs prepare mole sauce in traditional copper pots and grill tortillas on ceramic baking trays. The bar facade is inlaid with volcanic stone fragments, and the gaps are filled with resin materials. Under the lights at night, it shines like flowing lava, forming a visual echo of "solid and liquid" with the jumping flames in the chef's hands.

The long table in the center of the space can accommodate 20 people for dining together. The tabletop is embedded with a copper cutlery storage slot and a warming plate, and the edge is carved with abstract patterns of corn plants. The benches are designed with "no fixed seats" to encourage diners to move freely and share dishes, recreating the warmth of "eating together around the stove" in traditional markets. The industrial-style chandelier hanging from the ceiling is transformed from an old gas tank. The light shines through the hollow "corn silk" pattern lampshade, weaving mottled light and shadow on the tabletop, adding a bit of magical atmosphere to the dinner party.

The building uses the "chimney effect" to achieve natural ventilation: an air shaft is set above the kitchen with adjustable blinds installed on the top. When cooking, the rising heat drives the air flow and reduces the air-conditioning load; the high side windows in the dining area introduce diffuse light from the north, avoiding direct glare while making the rammed earth texture of the wall present a warm tone like dusk.
建筑采用 “煙囪效應” 實現自然通風:后廚上方設置拔風井,頂部安裝可調節百葉,烹飪時熱氣上升帶動空氣流動,減少空調負荷;用餐區的高側窗引入北向漫射光,避免直射眩光的同時,讓墻面的夯土肌理呈現出如黃昏般的溫暖色調。
90% of the building materials are sourced from Mexico: volcanic stone comes from a quarry in Puebla, steel is custom-made in a Monterrey factory, and wood is sustainable forest products from Chiapas. Tableware and decorations are all made by local craftsmen, such as handmade ceramic plates, copper mole sauce grinders, and even woven placemats hanging on the wall, all from indigenous cooperatives in Oaxaca, truly realizing the localization of the entire chain from "origin to table, from materials to culture."

The essence of Xilote's design is a profound reflection on "how tradition survives in the modern world" - it refuses to symbolize folklore, but instead constructs a taste container that transcends time through the primitive power of volcanic stone, the modern tension of steel, and the warm touch of wood. When diners sit on a bench made of steel and wood, tear open freshly baked tortillas with their hands, and watch the charcoal light jump on the volcanic stone wall, they may suddenly understand that the true cultural heritage is not to put the heritage into a glass display case, but to let it continue to grow in the smoke. This restaurant is like a corn seed sown in the urban jungle, using the roots of the building to deeply root in the soil, allowing the traditional branches and leaves to stretch towards the future, and finally bearing the cultural fruits of this era.
Xilote 的設計本質,是對 “傳統如何在現代存活” 的深刻思考 —— 它拒絕將民俗符號化,而是通過火山石的原始力量、鋼鐵的現代張力、木材的溫潤觸感,構建出一個超越時間的味覺容器。當食客坐在鋼鐵與木頭交織的長凳上,用手撕開剛出爐的玉米餅,看炭火光芒在火山石墻面上跳躍,或許會忽然懂得:真正的文化傳承,不是把遺產放進玻璃展柜,而是讓它在煙火氣中繼續生長。這座餐廳就像一粒播撒在都市叢林中的玉米種子,用建筑的根系深扎土地,讓傳統的枝葉向著未來伸展,最終結出屬于這個時代的文化果實。
