食材準(zhǔn)備:
豬大排4塊、大蔥半根、生姜1塊、大蒜5瓣、八角2顆、桂皮1小塊、香葉2片、料酒2勺、生抽3勺、老抽1勺、蠔油1勺、冰糖8-10顆、鹽適量、食用油少許。
制作步驟:
1.豬大排洗凈,擦干水分。大排兩面均勻劃4刀,用刀背輕輕拍打大排,讓肉質(zhì)疏松。大排放入碗中,加1勺料酒、半塊拍碎的生姜、1段大蔥,充分抓勻腌制15分鐘。
2.熱鍋倒少許油,油熱后將豬大排放入鍋中,中小火慢煎。煎兩面金黃后,盛出。
3.鍋中留少許底油,放入蒜末、大蔥段和生姜塊炒香。加入八角、桂皮、香葉,繼續(xù)翻炒出香味。倒入2勺生抽、1勺老抽、1勺蠔油,翻炒均勻,再放入冰糖,炒融化。
4.鍋中加入沒(méi)過(guò)豬大排的清水,大火煮開(kāi)后,放入煎好的豬大排。再次煮開(kāi)后轉(zhuǎn)小火,蓋上鍋蓋,燉煮25分鐘。期間翻面,讓大排均勻吸收醬汁。
5.待大排熟透,湯汁濃稠時(shí),加入適量鹽調(diào)味。大火收汁,讓醬汁緊緊裹在大排上,即可出鍋裝盤(pán),撒上少許蔥花點(diǎn)綴。
