首先準備一盆清水,然后將紅豆放進去浸泡一個小時以上。因為紅豆比較難煮熟,所以提前浸泡可以縮短烹飪時間。

接著我們把大米淘洗干凈,然后放入電飯煲中。之后往里面加入適量的水,然后按下煮飯鍵開始煮飯。
緊接著我們就可以準備配料了,先準備一個小碗,在碗中打入兩個雞蛋,然后用筷子攪拌均勻備用。
鍋內燒油,油熱后倒入打好的雞蛋液,等底部凝固以后,我們用鏟子給它翻個面,繼續煎至另一面金黃,然后盛出備用。
這個時候紅豆也應該泡好了,我們將紅豆倒進鍋里,開大火進行翻炒,炒干紅豆表面的水分。

然后往鍋里加入沒過紅豆的熱水,并且在里面撒入一小把食鹽,這樣可以讓紅豆更加軟爛。蓋上鍋蓋,開中小火慢燉 20 分鐘左右。
20 分鐘過后,打開鍋蓋,可以看到紅豆已經煮的非常軟爛了,這時我們再把之前煎好的雞蛋也倒進來,然后加入一大勺生抽,翻拌均勻,讓每粒紅豆都裹上調料,這樣可以讓這道菜的味道更上一層樓。
等到湯汁快收干的時候,我們的紅豆就做好了,把它盛出來放在米飯上面,這道香甜軟糯的紅豆飯就完成了。
