首先準備一斤五花肉,兩根大蔥。把五花肉切成薄片,再切成細絲,最后切成末,放在盆中備用。鍋燒熱加少許食用油,放入切好的大蔥段炒出香味后盛出備用。
在肉末中加入生抽、老抽、蠔油、十三香,攪拌均勻上勁。然后打入兩個雞蛋,繼續攪拌均勻,讓其充分吸收水分。接著倒入剛才炒好的大蔥碎,攪拌均勻,餡料就做好了。
取一張面皮,中間放上適量餡料,像包包子一樣收口捏緊,封住口。從一頭卷到另一頭,形成一個圓柱形,兩邊捏緊防止露餡。
然后用手輕輕壓扁,用搟面杖搟成餅狀,厚度大概在 0.3 厘米左右即可。電餅鐺刷一層食用油,預熱后放入餡餅,烙至底部定型,翻個面,烙至兩面金黃,餡餅鼓起小泡就可以出鍋了。
