首先準備半只豬蹄,清洗干凈后剁成小塊,然后冷水入鍋,加入幾片生姜和一把料酒,大火燒開后再焯水兩分鐘。把豬蹄撈出控干水分備用。
再來準備幾種自己喜歡吃的菌子,像這種比較常見的平菇、香菇、金針菇都可以。把它們全部洗干凈,切成小段或者撕成小朵。再準備幾個自己喜歡吃的蔬菜,比如生菜、菠菜、娃娃菜等,同樣清洗干凈備用。
起鍋倒入適量食用油,油熱之后把姜蒜末放進去爆香,然后再把豬蹄倒進來翻炒均勻,讓每一塊豬蹄都裹滿油花。接著往里面加入兩大勺豆瓣醬,快速翻炒出紅油。
這時就可以把所有菌子倒進去了,轉中小火慢慢燉煮個 10 分鐘左右,讓食材充分吸收豬蹄的油脂,也更入味。時間到了之后,再加入沒過食材的熱水,蓋上鍋蓋燜煮 20 分鐘。
最后放入自己喜歡吃的蔬菜,加少許食鹽調味,再煮個兩三分鐘就可以了。出鍋前撒上蔥花點綴一下,一碗香噴噴的豬腳火鍋就做好了,看著就有食欲。
