乳鴿:1只
去核紅棗:8-10顆
枸杞:一小撮
生姜:3-4片
料酒:1湯匙
清水:足量
食鹽:適量
制作步驟:
買回來的乳鴿,處理干凈,內外徹底沖洗干凈,血塊和雜質一定要清除掉。然后,將鴿子斬成幾大塊。準備一個鍋,放入鴿子塊,加入足量的冷水,再倒入1湯匙料酒和2片生姜。開大火燒開,水沸騰后,血沫和雜質用勺子仔仔細細地撇干凈。焯好水的鴿子塊撈出來,用溫水沖洗干凈表面附著的浮沫,瀝干水分。
紅棗用清水洗凈,對半切開。最重要的一步是去核!紅棗核性燥,帶核燉湯容易上火。剩下的生姜切片,把處理好的鴿子塊、去核的紅棗、姜片一起放入砂鍋中。倒入足量的清水,水量一次加夠,沒過所有食材2-3厘米以上。
第三步:
蓋上鍋蓋,先用大火燒開,然后立刻轉成最小的文火,慢慢燉,至少1.5小時。出鍋前的最后15-20分鐘,加入洗干凈的枸杞。根據口味,加入適量的食鹽調味。用勺子輕輕攪勻,嘗一下咸淡,不夠再加一點點。
