家里有上班的,還有上學(xué)的,早餐不能糊弄,更不去外面吃。小兒子十五歲了,我做早餐14年,多豐盛不敢說,但滿足家人口味是必需的,只要搭配好了,準(zhǔn)保全家滿意。我做早餐的心得:早起不慌張,需要睡前準(zhǔn)備好。
曬曬我家早餐:玉米渣粥,豬肉大蔥肉餅,白煮蛋,拌雞蛋。
這一頓早餐,睡前做了準(zhǔn)備,早起我只需要烙幾張肉餅,再拌個(gè)雞蛋就可以開吃了,全程也就半小時(shí),不急不慌,粥的溫度也剛剛好,不燙嘴不用等。
而家人更喜歡的是這搭配,吃飽吃好,上班的上班,上學(xué)的上學(xué),我這一上午的任務(wù)就完成了,用一頓溫馨的早餐,開啟了美好的一天。
早餐玉米渣粥。玉米渣熬粥不但好喝,營(yíng)養(yǎng)也高,特別適合用腦人群。有資料介紹,玉米渣中含有豐富的谷氨酸,能夠幫助和促進(jìn)腦細(xì)胞的呼吸,幫助腦組織里氨的排出,可健腦。
做法:
1,三口人有3大把玉米渣就夠了。睡前,把玉米渣清洗后倒入電飯煲里;2,加水,水量到食指第二指節(jié)線稍微往下一點(diǎn);3,電飯煲合攏后,先設(shè)置煮粥功能,再預(yù)約3-4小時(shí)以后開始工作。早起粥就熬好了,攪一攪就可以吃了。溫度正好,熱還不燙。
白煮蛋。對(duì)于灶和廚電少的家庭來說,這要是一大早做出好幾樣早餐真有難度,太費(fèi)時(shí)間了。我更主張睡前就把雞蛋煮好,吃的時(shí)候剝皮往熱粥里一放,也太省事了吧!
白煮蛋要想蛋黃不老不噎、蛋殼不裂咋做?
1,煮鍋里加水,燒到小泡不斷往上起;2,轉(zhuǎn)最小火,把雞蛋洗凈下鍋,蓋上蓋子燒開鍋,最小火煮2分鐘后關(guān)火,就不用管它了,別開蓋,鍋里燜著即可。
關(guān)鍵點(diǎn):熱水下鍋不裂,小火煮開2分鐘,燜10分鐘,蛋黃不噎,老嫩剛剛好。如果早上吃,關(guān)火后就不用管了。
豬肉大蔥肉餅,這頓早餐里費(fèi)點(diǎn)事的就是它了,好在睡前我就把餡和面團(tuán)準(zhǔn)備好了,早起烙餅也就十幾分鐘的事兒!
做法:
1,睡前把面粉加溫水拌面絮,揉成光滑軟面團(tuán),放冰箱冷藏待用;2,肥瘦豬肉餡倒入絞餡機(jī)里,多切點(diǎn)大蔥放入,加姜末、醬油、鹽、花椒面、料酒、少許植物油,攪到細(xì)膩;3,取出絞刀,餡放冰箱冷藏待用;
4,早起,把面團(tuán)搓長(zhǎng)條,切成等大的段。搟成長(zhǎng)方形面皮,在面皮2/3處全都抹餡,折攏成長(zhǎng)方形肉餅生坯,封口捏牢;5,平底鍋刷植物油預(yù)熱,碼入餅坯,烙到兩面金黃,鼓起,出鍋。
