第一步:挑選好適合的辣椒,做辣椒炒肉的辣椒,既不能太辣,也不能像青椒一樣完全不辣,如果太辣,辣椒會(huì)掩蓋住肉的香味。如果辣椒不辣,又不能起到香辣下飯的作用,這道菜就失去了靈魂,所以辣椒選擇很重要,湖南正宗的辣椒炒肉,一般是選用螺絲椒,我們就挑選本地的辣椒就好。

第二步:我找了冰箱現(xiàn)成的紅綠尖椒,還有線(xiàn)椒和小米椒,每樣挑選了幾個(gè)。洗干凈后,把辣椒切成辣椒圈。
第三步:豬肉處理,豬肉最好挑選肥瘦相間的五花肉,炒出來(lái)會(huì)更香。如果有人像我一樣不喜歡吃肥肉,那就挑選豬梅花肉,炒出來(lái)肉質(zhì)軟嫩不柴。把梅花肉切片,放入碗中,加入生抽,胡椒粉,淀粉抓一下腌制一個(gè)底味。
第四步:鍋中倒油,把辣椒放入鍋里,大火煸炒出虎皮,這樣辣椒的香味才會(huì)被炒出來(lái)。有的人做這道菜的時(shí)候,先炒肉,然后直接放入辣椒煸炒,這樣辣椒的香味不會(huì)被炒出來(lái),而且肉質(zhì)容易變老。把辣椒炒好之后盛出來(lái)。
第五步:另起鍋倒油,放入蔥姜蒜爆香,然后放入肉片炒至變色。
第六步:放入煸炒過(guò)的辣椒,淋入適量的生抽,放一點(diǎn)豆豉,適量鹽,翻炒一下即可出鍋。
【注意事項(xiàng)】1、肉的選擇,喜歡吃肥瘦相間的口感,就選擇五花肉,喜歡吃瘦的,就選梅花肉或者豬腿肉,不要選里脊,否則炒出來(lái)會(huì)很柴。
2、炒五花肉的時(shí)候,要把肥肉中的油脂煸炒出來(lái),這樣才會(huì)香而不膩。五花肉腌制的時(shí)候可以不用淀粉。瘦肉要多放一點(diǎn)淀粉,這樣才會(huì)有滑嫩的口感,而且要多放油,炒出來(lái)才會(huì)更香。
