食材:雞翅、食鹽、料酒、生抽、蠔油、黑胡椒、大蒜、白糖、玉米淀粉、雞蛋、食用油
蒜香煎雞翅的做法
- 雞翅清洗干凈
- 用刀在表面切花刀
- 大蒜拍碎,把汁水擠到雞翅里,大蒜粒不能放進去,就炸糊了,一股蒜臭味,加入適量料酒。
- 加入生抽
- 加入蠔油
- 加入黑胡椒顆粒
- 加入食鹽
- 加入白糖
- 加入少許雞精
- 用手把雞翅和調料抓勻
- 腌制半個小時
- 磕入一個雞蛋

- 舀四勺到五勺玉米淀粉
- 戴上手套抓勻
- 這時雞翅上掛上薄薄的一層面芡。面芡不能太厚,厚了雞翅不容易熟,模樣不好看,也做不到外酥里嫩。
- 煎鍋里倒入食用油,加熱后用筷子夾雞翅到鍋中。
- 中火慢煎,不時翻面。
- 兩面煎焦黃
- 煎到琥珀色剛好,用筷子對雞翅中間插下去,沒有血水就是熟透了。
