【清炒豌豆苗】 所需食材：豌豆苗、雞蛋、紅椒、鹽、蠔油、食用油、雞精

具體做法：1、挑葉片舒展像小荷葉的，莖稈掐著脆生生的，帶兩片嫩葉的最水靈。遇到莖部發紅別猶豫，那是陽光吻過的痕跡，更清甜。

洗菜小技巧：接盆清水撒點鹽，像給豌豆苗泡溫泉，轉兩圈泥沙就沉底了。撈出時記得甩三下，別讓多余水分搶了鍋氣。

2、紅椒豎著剖開，用刀尖“唰唰”刮掉白筋，切絲改丁隨意。悄悄說：留幾根紅椒絲最后撒盤里，顏值翻倍！雞蛋打散時加3滴水（炒出來更嫩），筷子“嘚嘚嘚”攪30下，起小泡泡才算合格！

4、重新開火，2勺油燒到筷子尖冒小泡。先扔紅椒絲“滋啦”爆香5秒，立刻倒豌豆苗！左手顛鍋右手鏟，全程大火猛攻！

5、看葉子塌下去立刻撒鹽、蠔油，把炒好的雞蛋回鍋。關火！用余溫翻兩下，雞精這時候撒（早放會苦?。?/p>
