準備半根大蔥,改刀切一點蔥花,然后再切一點姜末和蒜末備用,之后根據家里人口的數量準備一點干豆腐,也有的地方給它叫做千張豆腐皮兒,打斜切成三角塊兒。
切好以后將它放入清水鍋中,加入一點點的食用堿面,開鍋以后煮上40秒給它焯一下水,要注意哦,堿可別放太多啦,不然干豆腐會煮爛的。一直用大火煮 40秒左右,撈出來把水分瀝干,然后再用清水沖一沖,把堿味去掉。這一步呀,能讓干豆腐的口感變得更嫩滑,還能把豆腥味給去掉呢。
利用這期間切一點五花肉片備用。

鍋內加入一點食用油,然后下入切好的五花肉片用小火慢慢煸炒,直到肉片有點微微發黃,把多余的油脂給煸炒出來,這樣炒出來的菜會更香喲。然后加入蔥花、姜末還有兩瓣蒜末,也是用小火炒出香味來,在加入兩湯匙生抽、一湯匙老抽,翻炒均勻,把醬香味給炒出來。
再倒入適量的清水,水量只要沒過干豆腐就行啦,把焯好水的干豆腐片放進去,再加入一小勺白糖、適量的鹽、一湯匙蠔油,攪拌攪拌均勻,大火燒開之后轉小火燉煮 3 - 5 分鐘,好讓干豆腐能充分吸收湯汁的味道,蓋上蓋子咕嘟兩分鐘。
準備一點辣椒打結切段,兩分鐘后將切好的辣椒放入鍋中,大火收一下湯汁,之后淋入一點水淀粉,勾一下芡汁,最后把剩下的蒜末和適量的雞精加進去,翻炒均勻就能出鍋啦,在出鍋前加蒜末,可以讓這道菜的味道變得更濃郁喲。
