先準(zhǔn)備 200 克面粉,200 克細(xì)的玉米面放進(jìn)盆里,接著打進(jìn)去2個(gè)雞蛋,再加上 40 克白糖、4 克酵母、4克無鋁泡打粉,然后倒入 500 克 的純牛奶,用筷子或打蛋器攪拌成沒有干粉的面糊,此時(shí)的面糊應(yīng)該呈濃稠的酸奶狀,如果太干可以適量再加點(diǎn)牛奶,太稀就加一點(diǎn)面粉調(diào)整。蓋上蓋子,放到暖和的地方發(fā)酵 50 分鐘。
時(shí)間到了,面糊體積膨脹一倍,表面冒出好多小泡泡,拉開能瞧見內(nèi)部像蜂窩似的,這就說明發(fā)酵好了。要是晚上準(zhǔn)備第二天的早飯,可以放在冰箱冷藏室低溫發(fā)酵,早上起來直接進(jìn)行下一步。
用勺子把面糊攪一攪,排掉里面的氣泡。然后平底鍋點(diǎn)火燒熱,不用放油,舀一勺面糊垂直倒下去,餅的大小按自己的喜好定就行,舀一勺面糊就是一個(gè)小圓餅。保持小火,蓋上蓋子,當(dāng)面糊表面出現(xiàn)很多密集的小氣泡,并且邊緣微微凝固時(shí),開蓋用鏟子輕輕翻面。翻面后再烙1 - 2分鐘,直到兩面都變成金黃色,按壓餅身能快速回彈,就說明小松餅已經(jīng)熟透,可以出鍋啦!
