另起鍋留底油,油熱后下入蔥姜蒜爆香,再加入幾粒冰糖炒至融化,轉大火烹入料酒,加半勺生抽增鮮提色,一勺老抽調色調味,再添入足量清水沒過食材,蓋上鍋蓋燜煮兩分鐘,使肉塊充分入味。
兩分鐘后開蓋,加入白糖調味,翻炒化開白糖,淋入水淀粉勾芡,快速顛勺拌勻,讓湯汁濃稠包裹在肉塊上。這個時候就可以出鍋了。
起鍋燒油,油溫四成熱時,下入菠蘿塊,輕輕翻動,以免粘連,等菠蘿塊炸軟后即可出鍋控油。
鍋中留少許底油,下入蔥姜蒜炒香,加入番茄醬炒出紅油,再加入白醋、白糖、食鹽、雞精調味,最后用水淀粉勾個薄芡,熬至湯汁濃稠。
此時可以關火,把炸好的菠蘿塊倒入鍋中,再把肉丁也放進去,快速翻拌均勻,讓每一塊肉丁都能裹滿醬汁,這樣一道色澤金黃,酸甜適口的菠蘿咕咾肉就做好啦!
