首先準(zhǔn)備一把龍口粉絲,放入碗中,加入開水給它燙一下泡上5分鐘。
之后準(zhǔn)備一根胡蘿卜,去掉外皮,清洗干凈給它擦成細(xì)絲備用,再準(zhǔn)備一小把的菠菜,去掉根部和黃葉,然后將它放入淡鹽水中,多清洗幾遍給它清洗干凈。
之后在開水鍋中加入少許的食用鹽和油,將清洗干凈的菠菜放在里面焯水一分鐘,加油和鹽可以讓燙過的菠菜能保持翠綠的顏色,一分鐘后將它撈出,放入涼水中過一下涼,然后在攥凈里面的水分,改刀切成小段,放入胡蘿卜絲的盆里。
之后另準(zhǔn)備一個小碗,在里面打入兩個雞蛋,加入10克的玉米淀粉,將它攪拌均勻,將雞蛋攪散和玉米淀粉融合在一起,之后平底鍋打火,涂抹一點(diǎn)食用油,在將雞蛋液倒在里面,轉(zhuǎn)圈給它刮平,成一層薄薄的雞蛋餅,因?yàn)檫@個雞蛋餅特別薄,定型以后翻個烙一下另一面,完全定型以后將它撿出,卷成小卷,切成粗條,放入菠菜盆中。
這時這個粉絲也已經(jīng)完全泡好,泡軟,然后將它撈出,放入涼水中過一下涼,再控干水分也放入盆中,之后再加入一點(diǎn)花生米。
接著在小碗中,放入蒜末,紅椒段,白芝麻,倒入燒熱的油給它炸一下,激發(fā)香味,之后呢依次加入香醋,蠔油,少許的食用鹽,白糖,味精,香油,攪拌均勻,這個萬能的調(diào)料汁就炸好了,倒在盆里,給它抓拌均勻,邊拌邊抖摟,讓每一片菜葉上面都粘勻料汁。
拌好以后裝入盤中就可以開吃啦,這道爽口又解膩的小涼菜就做好了,簡單營養(yǎng)還好吃,下酒又下飯。
