在浸泡田螺的同時,我們可以來處理一下田螺肉。用剪刀將田螺尾部剪開一個小口子,這樣方便入味,再用手將里面的內臟全部給它摳出來,一定要多清洗幾遍,直到水變清為止。
下面鍋中加入適量清水,大火燒開后下入田螺焯水一分鐘,撈出控干水分備用。
起鍋熱油,放入姜蒜小米椒爆出香味,然后再倒入田螺翻炒均勻,這個時候可以淋入一點料酒去腥增香,繼續翻炒一會,讓田螺充分吸收調料的味道。
