大家好,我是梅子,最近在網(wǎng)上看到很多人都在分享自己做的菜龍,看起來(lái)特別誘人,我也忍不住嘗試了一下。結(jié)合家里現(xiàn)有的食材,我用茄子和土豆絲做餡,沒(méi)想到味道出奇的好!今天就把這個(gè)做法分享給大家,保證簡(jiǎn)單易學(xué),廚房小白也能輕松上手。
準(zhǔn)備400克面粉放入盆中,加入三克白糖,可以促進(jìn)酵母快速的發(fā)酵,之后倒入210克30度左右的溫水,攪成面絮狀后揉成光滑的面團(tuán),放到溫暖的地方發(fā)酵50分鐘。
利用這期間準(zhǔn)備2-3根茄子清洗干凈,改刀切成細(xì)絲,之后放入盆中加入一點(diǎn)食用鹽,腌制一下里面的水分,再準(zhǔn)備一個(gè)土豆,去掉外皮清洗干凈擦成細(xì)絲,半根胡蘿卜也是擦成細(xì)絲放入盆中,倒入一點(diǎn)食用油,將它們攪拌均勻放到一旁。
大概5分鐘,這個(gè)茄子的水分也已經(jīng)腌制好了,將里面的水分給它攥凈,放入土豆絲盆中,之后依次加入少許的十三香,生抽,蠔油,白糖,味精,少許的食用鹽,將它攪拌均勻,喜歡吃辣的等面發(fā)好以后再往里面放入一點(diǎn)辣椒絲拌勻。
時(shí)間到后這個(gè)面團(tuán)體積明顯變大了一倍,里面的蜂窩組織也非常豐富,說(shuō)明已經(jīng)發(fā)酵好了,將它取出移交到案板上,揉勻排氣至原來(lái)的大小,之后案板上多撒點(diǎn)干面粉,給它搟成長(zhǎng)方形的大薄片,再將拌好的茄子、土豆、胡蘿卜、青椒絲放在上面給它攤平,然后將它從頭卷起,卷的時(shí)候要緊實(shí)一點(diǎn),兩頭給它捏緊。
每隔兩指寬切一刀,但不要給它切斷,每一刀中間再用刀背壓一下,然后將它從頭盤(pán)起,堵頭壓在底部,做好以后直接放入蒸屜中,二次醒發(fā)10~15分鐘再開(kāi)火,水開(kāi)以后計(jì)時(shí)蒸15分鐘。
關(guān)火5~6分鐘后再開(kāi)蓋將它取出,剛出鍋的茄子土豆絲菜龍,香氣撲鼻,咬一口,松軟的面皮包裹著鮮香的餡料,口感豐富,層次分明。茄子的軟糯、土豆的綿密,再加上各種調(diào)料的香味,真的是太好吃了!
