玫瑰青提奶油蛋糕C99的做法
- 玉米油+牛奶+鹽攪打至乳化;
- 篩入低粉拌至無(wú)干粉;
- 分離雞蛋,蛋清分到干凈的盆中,蛋黃直接分到面糊里;
- 混合蛋黃與面糊;
- 預(yù)熱烤箱,往蛋清中加入白醋和一半的細(xì)砂糖;
- 打出淡紋路后再加入剩下的,繼續(xù)打至中性偏硬;
- 鏟1/3蛋白霜到面糊中隨意拌均勻;
- 把面糊倒回蛋白霜盆中,用刮刀以J字的軌跡翻拌均勻;
- 把面糊從20cm的高度倒進(jìn)模具中,并輕震掉大氣泡;
- 放進(jìn)烤箱底層,140度烤35分鐘,下火升至150度再烤10分鐘;
- 出爐輕震出熱氣后倒扣晾涼;
- 在此期間,把抹茶粉+開(kāi)水拌成醬,蓋好晾涼備用;
