1. 繼續揉至完全擴展階段；

1. 滾圓，覆蓋保鮮膜，常溫發酵至二倍大；

1. 蘋果去皮，去核，切丁；

1. 香草糖倒入奶鍋；

1. 小火加熱至焦糖色；

1. 倒入蘋果丁，中小炒干水分；

1. 加入黃油，炒制完全融化；

1. 繼續收干水分，關火，冷卻備用；

1. 發酵好的面團輕壓排氣，搟成40×30厘米的長方形，將焦糖蘋果平鋪在面片上；

1. 橫向卷起，均割12份，切口朝上，碼放到烤盤上，稍加按壓一下；

1. 室溫發酵30分鐘，表面涂抹一層蛋液；

1. 送入提前預熱的烤箱，上下火175°C，烘烤20分鐘；

1. 焦糖蘋果面包卷。
