制作步驟:
1.花甲放入淡鹽水中,滴幾滴食用油,浸泡1-2小時,讓它們充分吐沙。期間換幾次水。吐好沙后,用雙手像搓衣服一樣,輕輕揉搓花甲,再用清水沖洗干凈外殼的泥沙。
2.燒一鍋開水,加入幾片姜和少許料酒,倒入花甲焯水。看到花甲微微開口,立刻撈出。撈出后,用溫水沖洗掉表面的浮沫和可能殘留的細沙,瀝干水分。
3.姜切末,蒜切末,干辣椒剪段,小米辣切圈,大蔥切段。郫縣豆瓣醬用刀稍微剁細一點,更容易出紅油和香味。鍋中倒入食用油,燒熱先下入花椒粒,小火煸炒出香味后,撈出花椒。
4.轉中火,下入姜末、蒜末、干辣椒段和郫縣豆瓣醬,慢慢煸炒出紅油和香味。底料炒香后,倒入處理好的花甲,迅速轉大火!快速翻炒均勻,讓每個花甲都裹上醬汁。
5.沿著鍋邊,淋入1大勺料酒,快速翻炒,去腥增香。接著加入1大勺生抽、1小勺蠔油和半小勺白糖,繼續大火翻炒均勻。
6.待花甲全部均勻上色,湯汁變得濃稠,撒入蔥段和小米辣圈,快速翻炒幾下,關火。最后撒上香菜段,即可裝盤上桌!
