天熱出汗多,很消耗體力,光是蔬菜水果營養不夠,每天都要加點肉菜。在我家,最受歡迎的當屬酸菜魚,這周都吃4回了,補蛋白增強體質,開胃,滋味鮮美,尤其是湯,一碗一碗都喝不夠。
有人形容酸菜魚是又酸又菜又多魚,我覺得太貼切了,吃著太過癮了!
酸菜魚我家做了好多年,做過酸辣味的,也做過澆油版的,沉淀至今天的這版是全家人都喜歡的。這款酸菜魚老人和孩子也能吃,一點都不辣,酸香開胃,魚片滑嫩,湯鮮肉也鮮。常來我家做客的朋友都夸好,幾乎每次來家都點名它。
有人覺得在家做酸菜魚太費事了,其實我覺得不難,你只要學會片魚,怎樣處理魚片不碎滑嫩,幾乎就完成了一多半。其余的步驟無非就是切、炒、煮,也沒啥難度。

【家庭版酸菜魚】
需要準備的食材:新鮮鯉魚1條(用草魚最好),魚酸菜1袋,小蛋清1個,稠紅薯淀粉半小碗,姜片,蒜片,白胡椒粉,白米醋,鹽,植物油(或豬油)
詳細做法:
第一步,主要食材是新鮮剛宰的魚,去鱗、去內臟、去腮、去魚牙、去魚鰭;魚酸菜1袋,控去水
第二步,把魚沖洗干凈,然后在魚尾切一刀,別切斷。用刀緊貼魚脊骨一片兩半
第三步,片到魚頭的位置停住,直接一劈兩半,清洗干凈
第四步,魚頭剁下來,用刀緊貼魚脊骨把魚肉片下來
第五步,兩片魚肉放一堆(左),魚排和魚刺單放一堆(右)
第六步,魚排和魚刺剁成塊,魚頭一劈兩半,都入盆沖洗干凈,控水待用
第七步,把魚肉鋪在菜板上,用手按著斜刀片成稍厚的片
第八步,魚肉都片成了微厚的片
第九步,把魚片入盆清洗,控水后再用1勺鹽抓攥,再清洗后控去水

第九步,把魚片攥去水,加少許鹽和雞精,抓黏。分3次加少許水往魚片里抓至吸收,磕入一個蛋清,抓黏,放稠淀粉抓黏至上圖狀態
第十步,再把酸菜清洗2遍,攥水后切成粗條待用。準備工作已完畢:剁成塊的魚排魚骨魚頭,抓好的魚片,切好的酸菜
第十一步,炒鍋里加豬油燒熱,煎魚排魚骨魚頭,放蔥姜煎到魚微黃
第十二步,倒入開水,大火煮4分鐘翻滾至魚湯奶白,中途撇掉浮沫,倒入盆里待用
第十三步,炒鍋洗凈,擦去水,放豬油融化,放姜和蒜炒香,倒入酸菜,中大火翻炒至香味濃郁,變得油潤
第十四步,用笊籬濾魚湯入鍋
第十五步,燒開鍋,調味:少許鹽和少許白醋、白胡椒粉調味。嘗一下湯的味道:酸咸度合適即可
