第二步,揉勻后,餳10分鐘
第三步,炒鍋里加植物油燒至溫熱,直接打入3個雞蛋,用飯勺或筷子不斷攪散,攪炒成顆粒狀,關火,涼后再用
第四步,煮鍋里加水燒開,先把芹菜葉子焯水,撈出過涼
第五步,再把木蘭芽下鍋焯水,撈出過涼
第六步,把芹菜葉子攥水切成末入盆,再把木蘭芽攥水切碎入盆,放入雞蛋碎,再把瘦肉丸子碾碎入盆。加入豬油、蔥姜末、十三香、鹽,拌勻
第七步,把拌好的餡攥成一個個的菜團。
要想菜餡成團的關鍵是水分不能太大,所以在拌餡的時候別放醬油,植物油的量也不要多。此外,菜攥水的時候稍微干點
第八步,取一塊和好的面團,團一團后按扁,包入菜團子。雙手配合,一邊往起托,一邊封口,最后包成圓形菜團子形狀
