一到夏天,是不是總想吃點清清爽爽、帶點小味兒的菜?今兒給你們分享一道我家餐桌的 "夏日頂流"—— 菠菜粉絲拌花生!每次端上桌,不管是配米飯、下面條,還是當佐酒小菜,都搶著光盤。做法簡單到不行,輕松拿捏,咱這就嘮嘮咋做~
食材準備:
菠菜:300克
粉絲:1小把
花生米:3把
大蒜:6瓣
小米辣:2根
白芝麻:1小把
調料:
香醋2勺
生抽1勺
蠔油半勺
白糖小半勺
鹽少許
香油1勺
辣椒油1勺
烹飪步驟:
第一步:菠菜根去掉,一片一片葉子掰開,放水里泡5分鐘。鍋里燒開水,加一小勺鹽和幾滴食用油,把菠菜放進去,用筷子翻兩下,讓葉子都受熱,大概煮15秒,看到葉子變軟、顏色變深就趕緊撈出來。撈出來后馬上過涼水,讓菠菜涼透,把菠菜擠干水分,切成段,放盆里。
第二步:泡粉絲不用煮!鍋里燒點溫水,關火,把粉絲放進去,泡10分鐘,直到粉絲變軟變透明。泡好后撈出來,過一下涼水。然后把粉絲瀝干水分,用剪刀剪成10厘米左右的段,放進菠菜的盆里。
第三步:鍋里放少許油,冷鍋就把花生米放進去,開小火慢慢炸,用鏟子不停翻動,讓花生受熱均勻。炸到花生外皮稍微變色,能聞到香味,有一兩顆開始 "噼里啪啦" 響的時候,馬上關火。把花生撈出來,放涼,等涼了之后,放進一個小碗里。
第四步:找個小碗,把蒜末、小米辣圈放進去,再撒上1小把白芝麻。鍋里燒一勺熱油,燒到冒煙,然后把熱油潑在蒜末上,接著加2勺香醋、1勺生抽、半勺蠔油、小半勺白糖、少許鹽,用筷子攪拌均勻,嘗嘗味道,根據自己口味調整。拌好的料汁倒進菠菜和粉絲的盆里。
第五步:炸好的花生米放進盆里,淋上1勺香油,然后戴手套,抓拌均勻,讓每根粉絲、每片菠菜都裹上料汁,再撒上點白芝麻點綴一下。這時候可以偷偷嘗一口,哇!菠菜的清爽、粉絲的爽滑、花生的香脆,加上酸甜微辣的料汁,一口下去超滿足,夏天沒胃口的時候來上這么一盤,瞬間開胃!
