蝦油的做法
- 蝦頭里的這一坨,可以連著蝦線一起扯出來不要,但如果你不介意的話,可以一起熬,其實會更香;
- 稍微沖洗下,不洗也行,后面高溫炸半小時,啥細菌都得死;
- 鍋燒熱,倒入菜籽油燒熱,再倒入蝦頭蝦殼還有姜片;
- 中小火炸20分鐘左右;
- 再放入大蔥段,繼續炸10分鐘左右就可以關火了;
- 過濾出來;
- 姜和蔥撈出來不要,蝦頭蝦殼打碎;
