1. 放入排骨，一直煸炒到排骨變色后，表面金黃微焦
2. 此時就可以放入黃金比例中的調料了，順序是：先放一湯勺料酒，接著兩湯勺醬油，三湯勺米醋最后四湯勺白糖，炒勻
3. 再倒入能沒過排骨的開水，調中小火燜20分鐘
4. 20分鐘后調入鹽，開大火收汁，收到汁濃色亮時，撒入芝麻點綴即可出鍋（鍋里剩下的姜片丟掉不用，最后大火收汁時注意多翻動鍋內的排骨，避免燒焦喲！）

小貼士

tips:
*做這道菜，請一定選用豬純小排，最好還帶有脆骨的，此部位肉質軟嫩，是最適合用來做糖醋排骨的。
*排骨在入鍋炒之前，盡量晾干水分，用廚房紙擦干也行，這樣在炒的時候不會油花四濺，燙到手。
*在灑料酒的時候，沿著鍋邊淋一圈，這樣酒香分布更均勻。
*黃金比例中的3湯勺米醋和4湯勺糖，可以根據自己的口味來調整，喜歡酸點的可以換成4湯勺米醋、3湯勺白糖。
*喜歡顏色深點的童鞋，可以在燜好調入鹽的時候，再放少量的老抽來增色
