接著再切一點蔥花,姜末,蒜末備用。切好以后在鍋中倒入食用油,油熱后放入姜末、蒜末爆香,加入豬肉末煸炒至變色,炒出香味加入一點郫縣豆瓣醬,炒出紅油以后調最小火,然后根據自己的喜好放入辣椒面,和花椒粉炒出香味,使辣味和麻味充分釋放出來 ,之后加入生抽,少許的蠔油,在倒入清水,調味呢,加入一點食用鹽,白糖,水開后放入焯好水的豆腐塊,輕輕晃動鍋子,讓豆腐均勻地吸收湯汁的味道,小火煮3-5分鐘,讓豆腐入味。
時間到后打開蓋子,然后調大火收一下湯汁,之后放入切好的蒜末,味精,綠蔥花,把水淀粉慢慢倒入鍋中,邊倒邊攪拌,使湯汁變得濃稠,讓豆腐均勻地裹上湯汁,等湯汁濃稠后,撒上蔥花即可出鍋裝盤。
這一道麻辣豆腐就做好了,豆腐嫩滑入味,麻辣鮮香,超級下飯特別的好吃,大家一起來試一試吧。
