第三步:
我們將炒好的鹽在鍋底鋪成1cm厚的“鹽床”,把處理好的蝦頭尾交錯平鋪,再均勻撒上之前盛出的那半份鹽。重點來了:加蓋后,轉最小火焗5分鐘,期間絕對不能掀蓋!利用鹽的余溫慢慢滲透,蝦殼會自然形成一層脆膜。 聞到淡淡焦香時,用筷子戳蝦頭,能輕松穿透就說明火候到位。關火后,再燜1分鐘,讓咸味絲絲沁入蝦肉纖維。
第四步:
用筷子輕輕撥開鹽堆,橙紅油亮的蝦子已經裹著晶瑩的鹽粒躍然眼前。快速抖落多余鹽粒**,擺盤時,撒幾粒翠綠的香蔥末,趁熱上桌才能吃到“咔嚓”脆的蝦殼。 可以調個秘制蘸汁:蒜末、小米辣用熱油激香,加兩勺蒸魚豉油、一勺檸檬汁,咸鮮中帶著微酸,和鹽焗蝦簡直是天作之合。
