聽起來有點不可思議,吃起來卻讓人欲罷不能的神仙小甜點——炸牛奶!咬開酥脆金黃的外殼,奶香濃郁、絲滑綿密的內(nèi)餡瞬間在口中化開,冰涼香甜的滋味直抵心間,這就是炸牛奶帶來的絕妙體驗!今天,跟著我做,保證廚房小白也能輕松做出讓家人朋友哇聲一片的炸牛奶!
食材清單:
純牛奶250毫升,玉米淀粉30克,白砂糖35克,玉米淀粉,雞蛋1個,面包糠,食用油。
制作步驟:
1.牛奶、玉米淀粉、白砂糖一起倒入奶鍋中,用勺子充分攪拌均勻,一定要攪拌到完全沒有干粉顆粒的狀態(tài)。
2.奶鍋放到爐灶上,全程開小火,一邊加熱,一邊用勺子不停地攪拌。慢慢感覺到奶糊開始變濃稠,從稀溜溜的液體變成像濃稠酸奶那樣的糊狀。
3.當(dāng)攪拌時感覺到明顯的阻力,刮刀劃過鍋底,留下的痕跡不會馬上消失,就說明奶糕糊熬好啦!
4.熬好的奶糕糊趁熱倒入一個干凈的容器中,底部已經(jīng)薄薄地刷一層無味的食用油。容器在桌上輕輕震幾下,讓表面更平整。
5.奶糕自然冷卻到室溫后,蓋上保鮮膜,放入冰箱冷藏室。冷藏2-3小時,最好是隔夜,讓奶糕充分凝固成形。
6.奶糕徹底凝固后,取出來,倒扣在干凈的案板上,撕掉保鮮膜,切成大小均勻的長條或者方塊。
7.準備三個淺盤,分別裝入干玉米淀粉、打散的雞蛋液和面包糠。拿起一塊切好的奶糕,按照順序:在干淀粉里打滾,均勻裹上薄薄的淀粉,拍掉多余的粉。放入蛋液中,每個面蘸到蛋液。最后扔進面包糠里,粘滿金黃的面包糠,按壓一下。依次處理好所有的奶糕塊,整齊地擺放在盤子里。
8.鍋中倒入足量的食用油,開中火加熱。油面微微晃動,奶糕塊小心地放入油鍋中,不要急著翻動,炸1分鐘。
9.奶糕的外殼稍微定型后,用筷子輕輕撥動,受熱均勻。保持中小火,炸到奶糕表面金黃酥脆,用漏勺撈出來。
10.撈出的炸牛奶,放在鋪有廚房吸油紙的盤子里,吸去多余的油分,稍微放涼,即可享用!
