【豬皮凍】
準備豬皮、生姜、大蔥或者小蔥、料酒、食鹽、小蘇打。
1、豬皮放進大盆內,加水清洗,把表面洗凈。然后加一勺小蘇打,用手反復揉搓,每一塊豬皮都搓洗到位,處理好后沖洗干凈。接著再加一勺小蘇打揉搓,這么做可以去除異味,比只用清水洗干凈很多。
2、洗凈后的豬皮放進鍋內,加入清水,沒過豬皮,再放入一勺料酒,大火煮開,攪動幾下撈出。
3、放進水中泡著,趁著熱乎勁用鑷子把豬皮上的豬毛去掉,越干凈越好,這一步稍微耽誤時間,但為了好吃要有耐心。

4、豬毛去除干凈后,抓洗干凈,再放進鍋內,加入清水、料酒、姜片,大火煮開撈出。
5、放到不太燙手了,去掉豬皮上的白色油脂,再用刀來回刮一刮,越干凈越好。
6、所有豬皮都處理好了,切成細絲狀,放進干凈的盆內,再加一勺食鹽,用手反復地抓揉。差不多三分鐘后,用清水清洗,再重新加鹽抓揉,這樣至少重復三次,直到清洗時看不到油脂。豬皮處理得越干凈,做出的豬皮凍越透亮。
7、豬皮絲放進鍋內,加入清水,差不多高出豬皮三指的水量,再加入姜片、蔥段或者蔥結,蓋上蓋子大火煮。
7、煮開后轉小火,一直煮到豬皮軟糯的狀態,輕輕一夾就斷,這時候去掉蔥姜,再放一點鹽煮一分鐘。喜歡有顏色的豬皮凍,可以加生抽或者老抽上色。
8、煮好后倒進容器內,靜置一個晚上,等完全凝固就可以取出來切塊了,調一碗料汁食用。
做豬皮凍,掌握好3點:
一、想要晶瑩剔透、無腥味的豬皮凍,不要只焯水。熬煮豬皮前要將豬皮上的油脂去掉,越少越好。
首先要用小蘇打抓揉,然后要去掉白色油脂,再刮一刮,最后用食鹽抓揉,這樣處理保準油脂少,做出透亮無腥的豬皮凍。
二、熬煮加水的時候,最好高出豬皮三倍的水,不要加太少,避免水熬干了豬皮還不軟。
三、最后豬皮煮軟了,要看看水量,若還有很多,需要再熬煮一會兒,避免太稀不成形。
