冷面先上來(lái)了。那碗面浸在冰水里，碗壁上結(jié)著一層薄霜，湯面上浮著幾塊冰碴子，在七月的熱氣里冒著白煙。我挑起一筷子面條，面條是蕎麥做的，灰褐色，極細(xì)，卻韌得很，咬在齒間有一種微妙的抵抗感。湯是牛肉湯，冰涼，酸甜，帶著梨汁的清香，偏又點(diǎn)綴著辣椒末，冰火兩重天，從舌根一路廝殺到胃里。
鄰桌的朝鮮族老人看我吃得齜牙咧嘴，忽然笑了，用生硬的漢語(yǔ)說(shuō)："夏天，冷面是神仙。"他面前擺著一碟辣白菜，紅得發(fā)亮，上面堆著幾片雪白的蘋果。我學(xué)著他的樣子要了一份，白菜脆生生的，先是一股沖鼻的辣，接著泛起發(fā)酵的酸香，最后咬到蘋果片時(shí)，甜味忽然漫上來(lái)，竟把之前的刺激都馴服了。老人見(jiàn)我驚訝，得意地點(diǎn)頭："甜是辣的影子。"
餃子是后來(lái)加的。跑堂的小伙子操著朝漢混雜的方言嚷嚷："三鮮的！爆汁！"端上來(lái)時(shí)，皮子薄得透光，能看見(jiàn)里頭粉紅的蝦仁、嫩黃的雞蛋和青翠的韭菜。我小心翼翼咬開(kāi)一角，湯汁立刻涌出來(lái)，燙得舌尖發(fā)麻，鮮味卻排山倒海地壓過(guò)來(lái)。這餃子不像南方的灌湯包那般油膩，清鮮得像是把整片長(zhǎng)白山的溪水都包了進(jìn)去。
