西藏的牦牛肉干，向來是極好的。初入口時，干硬如柴，須得用力撕咬，方能扯下一片。咀嚼久了，卻漸漸滲出些肉香來，混著高原的風沙氣，竟也別有一番風味。

那些賣肉的藏人，面色黝黑，皺紋里夾著陽光的痕跡。他們排出一串銅錢，買主便排出九文大錢，交易便成了。肉干用粗麻繩捆著，掛在帳篷外頭，任風吹日曬。有時風大，肉干便如旗幟般獵獵作響，引得幾只禿鷲在上空盤旋，卻又不敢下來。

我曾在一位老牧人帳篷里嘗過最地道的肉干。那老人手指彎曲如鷹爪，從梁上取下一塊黑乎乎的物事，用小刀削了幾片給我。肉片上還沾著些鹽粒，入口咸得發苦，但嚼著嚼著，竟嚼出些奶香來。老人說，這是用酥油抹過的。
