食材準備：

小酥肉食材：豬里脊肉300克、雞蛋1個、玉米淀粉100克、面粉50克、花椒粉1勺、白胡椒粉半勺、鹽1勺、料酒1勺。

酸湯食材：西紅柿2個、金針菇1把、木耳1小把、青菜適量、蔥姜蒜各 1 小塊、小米辣3根、干辣椒5個、郫縣豆瓣醬1勺、生抽2勺、香醋3勺、蠔油1勺、白糖半勺、鹽適量、清水800毫升。

制作步驟：

1.豬里脊肉洗凈，切成筷子粗細的條，放入碗中，加入1勺鹽、半勺白胡椒粉、1勺花椒粉、1勺料酒，打入1個雞蛋，抓拌均勻腌制20分鐘，。

2.碗中倒入淀粉和面粉，慢慢加入清水，邊加邊攪拌，直到面糊呈酸奶狀，提起筷子能掛住面糊且緩慢滴落的狀態(tài)。腌制好的肉條放入面糊中，均勻裹上面糊。

3.鍋中倒入寬油，燒熱，肉條一根根放入鍋中，中小火炸，定型，撈出。待油溫升高，再次倒入肉條復(fù)炸1分鐘，炸至表面金黃酥脆后，控油撈出。

4.西紅柿切3刀，用開水燙1分鐘，去皮后切成小塊；金針菇去根洗凈，撕開；木耳泡發(fā)后，撕成小朵；蔥姜蒜切末，小米辣、干辣椒切段，備用。

5.鍋中留少許底油，放入蔥姜蒜末、小米辣、干辣椒段，炒香。加入1勺郫縣豆瓣醬，炒出紅油。倒入西紅柿塊，翻炒出沙。

6.鍋中加入2勺生抽、3勺香醋、1勺蠔油、半勺白糖，翻炒均勻后，倒入800毫升清水，大火煮開。放入金針菇、木耳，煮3分鐘，加鹽調(diào)味。

7.炸好的小酥肉放入酸湯中，煮1分鐘，吸收湯汁的味道。最后放入青菜，燙至斷生，即可出鍋。撒上蔥花和香菜，一碗酸香開胃、酥嫩可口的酸湯小酥肉就大功告成啦！
