這個糯米糕呢,是用糯米粉加糖做的,所以它吃起來就是甜甜糯糯的口感。今天我就來教大家做一個簡單又好吃的糯米糕,不用蒸鍋就能做出來,特別適合新手小白。
首先準備一個大碗,在里面加入 300 克的糯米粉,100 克的白糖,然后加入 240 毫升的溫水。注意啊,溫水不能太燙,會把酵母給燙死。
接著呢,攪拌均勻,再撒入一點干面粉,這樣可以防止起疙瘩。全部攪拌好之后呢,就可以蓋上保鮮膜發酵了。發酵時間大約需要一個小時左右。
這個時候我們可以來做紅豆沙餡料,準備好 200 克的紅豆,提前浸泡一晚上。泡好的紅豆清洗干凈,放入鍋中,加入兩倍的清水,大火煮開后轉小火煮至軟爛。煮熟的紅豆放涼以后,用勺子壓成泥備用。
接下來我們看一下面糊的情況,已經發酵好了。發好的面糊是呈蜂窩狀的,并且比之前膨脹了很多。如果發酵的時間不夠長的話,它就不會發酵成功。
將發酵好的面糊倒入篩網當中過濾一下,去除里面的顆粒雜質,這樣做出來的糯米糕更加細膩可口。過濾好的面糊呢,再次倒回碗中,然后加入 5 克的食用堿面,用筷子攪拌均勻。如果沒有食用堿面的話,可以用小蘇打代替,但是用量要減半。

最后呢,將調制好的面糊倒在模具當中,表面鋪上一層紅豆沙,然后再在上面撒一些黑芝麻點綴一下。烤箱預熱 170 度,中下層烘烤 30 分鐘即可。
出爐后的糯米糕,外皮焦脆,內里柔軟,而且層次分明,咬上一口,滿嘴都是紅豆沙的香味,非常的好吃。
