制作步驟:
1.鮮蝦洗凈,去頭去殼,挑出蝦線。蝦頭別扔,留著。冬瓜去皮去瓤,切成薄片,生姜切絲,小蔥切段。
2.鍋中倒入少許食用油,油熱后放入蝦頭,小火煸炒。用鏟子按壓蝦頭,蝦油炒出來,直到蝦頭變得酥脆,盛出蝦頭,留下蝦油。
3.冬瓜片放入鍋中,用蝦油翻炒3分鐘,讓冬瓜稍微變軟。
4.加清水,大火煮開后,轉小火煮8分鐘,直到冬瓜變得透明。接著放入蝦仁,煮至蝦仁變色熟透。
5.加入半勺鹽、少許白胡椒粉調味,攪拌均勻,撒上蔥段,即可出鍋。
