- 南瓜蒸熟后用叉子壓成南瓜泥放涼備用
- 將面團所有材料(除蔓越莓外)放入攪面機器中攪拌至面團延展的狀態
(??水量因面粉品牌和南瓜泥的水分會有差異,適當調整)
- 加入蔓越莓干攪拌均勻
- 面團整理滾圓后蓋上保鮮膜,進行基礎發酵
- 面團發至約2倍大后戳洞不回縮不反彈即可??
- 將面團充分排氣
- 從四周往底部收的方式,揉圓
- 發酵藤籃撒上一層面粉(面團分量外)
- 把面團光滑面向下,放入藤籃中,蓋上布套,在溫暖濕潤處進行最后發酵~
(沒有藤籃,直接放在烤盤中發酵也)
- 發酵至2倍大,手指輕按表面可以緩慢回彈
- 藤籃上面蓋一張烘焙紙,倒扣出發酵好的面團
- 表面用刀劃十字紋路
- 放入預熱到190度的烤箱,烘烤25分鐘左右至表面金黃上色即可??
- 出爐后放在烤網上晾涼?
